Literally one of my favorite desserts now. This is a suzon fritter. It's basically sweet creamy rice rolled into a ball with a raspberry in the center, breaded in panko and deep-fried.
Recipe:
- Wash one pound of rice. Cover it with plenty of cold water, bring it to a boil then strain it. wash the rice once more in warm water, strain it and set it to cook with 2 pints of boiled milk, 2/3 lbs of sugar, a pinch of salt, and 3oz of butter.
-Flavor with vanilla bean or a few strips of lemon/orange rind. when liquid begins to boil, cover and put in oven (200F) and let it cook gently for 20-25mins.
-Remove from oven when rice is cooked, mix in 16 egg yolks. mix gently, to prevent breakage of the rice kernels.
-Spread rice on a sheet tray to cook. divide portions out. Roll portions into balls and insert a berry in the center (your choice)
-Roll in flour, than egg, than panko bread crumbs and fry in hot oil. (deep-fry)
The sauce is a raspberry coulis, raspberries simmered with sugar than strained.
