Well, gryphons have ears, but in most avians they're nothing more than holes in the sides of their head.
And beak-piercings would completely painless, since beaks are made of keratin (the stuff your nails and hair is made of) and have no nerves. It's no different than nailing horseshoes into a horse's hoof.
