[RECIPE] Fried Matzos (Matzos Brei)
A quick, filling and yummy way to deal with leftover matzos!
3 pieces matzos
2 eggs
Sea salt and fresh ground pepper to taste
Crumble matzos in a large bowl and soak in hot water for 2-3 minutes.
Drain, pressing out the excess water so that you have soft but not soggy matzos.
Crack two eggs over the matzoh. With a fork, beat the eggs into the matzos until the entire mixture is blended.
Cook as you would an omelet (frying pan, medium heat) until the matzos are at the desired doneness (I like 'em a little runny).
Add salt and pepper to taste. Ess, ess, mine kindt!
