They are either cut or whole cucumbers soaked in a pickling brine of vinegar and spices, some times sugar if you want sweet. There are many varieties. My grandmother makes homemade pickles.

there's also the whole, many vegetables are served 'pickled', thing as well. :)
i personally like 'em. shuold give 'em a go one day Leo ^^ they're pretty good--unlses ya REALLY hate vinegar flavor even the slightest--but the nice crisp snap sound with a bite is fun too :3
