Something else I put together while I was on vacation :3
I had some leftover asparagus that was cooked with lemon and garlic...
And the shrimps were pre-cooked, so not much to say there... (needed maybe about 2 -3 minutes, if that, to get them hot)
BUT those potato pancakes were a bit different!
8 red potatoes, shredded
1 clove garlic, minced
1 shallot, chopped
1 egg
But, there werent any breadcrumbs to be had -
So...at least 1/4 cup OF...shredded wheat crumbs! (from a box of shredded wheat cereal :P)
salt and pepper to taste
2 tablespoons of olive oil to cook with
I hand shredded the potatoes, then squeezed out the juice to get them as dried out as possible, then mixed them with the other ingredients (except the olive oil)
Then turned the saute pan up to high with the oil, and scooped them onto the pan (just squished the scoopfuls with my paws, and then fried them)
Only need about 2 - 3 minutes to cook and just keep an eye on them so they get browned on both sides!
Then serve and chow down!
