Swordfish W/Roasted Eggplant And Sauteed Asparagus
More food goodness continues!
I cooked the swordfish rather simply - salt and pepper on both sides, on a non stick sauté pan for 5-6 minutes for each side.
The asparagus was cooked about the same way, salt and pepper with 1 shallot, chopped and 1 garlic clove chopped...1 tablespoon olive oil and a good squeeze of a Meyer lemon - then let it cook in the juices for about 8 minutes.
