Polenta is a cornmeal porridge popular in northern italy and parts of france. It tastes about as good as it sounds, and is a bitch to make (you need to stir it for 45 minutes straight), but you can find pre-made packets in some specialty supermarkets.
I pan fried it, then layered it with sauce, mozzarella, pecorino, tomato and basil, and then threw it in the oven to let everything melt.
