I know he could do that in Crash: The Wrath Of Cortex, while looked pretty but was somewhat poorly executed.

Ah, good ol' Crash. His classic platform games were so simple yet so well done. Such a pity he kinda got removed from that formula when he was bought offa Naughty Dog...he kinda went the same way Spyro did in pretty much the same time period.
