HAH! Here's something you don't see every day! With all the sweet things you can do with pumpkin, I'm glad for a little while I'm posting savory dishes. I love how it's so versatile. I was watching a famous chef on a food channel, and while I don't much like their personality ... I have to admit this got me curious, and I've added to it. TO THE GROCERY STORE!! I wish I had bought the quesadilla maker to be honest, flipping these things was no joke.
Ingredients:
2 cups canned pure pumpkin puree (not the pie mix)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 teaspoon ground cumin
8 8 inches flour tortillas
4 ounces goat cheese, crumbled
1/2 cup chopped walnuts, toasted
1/4 cup vegetable oil
Directions:
In bowl, stir pumpkin, garlic, onion, and cumin. Spread over 4 tortillas.
Sprinkle with cheese and nuts. Top with remaining tortillas.
In large skillet, heat 1 tbsp. oil over medium-low. Cook quesadillas 1 at a time, turning once and adding more oil between batches, until browned, 3 minutes.
Cut into wedges and serve with salsa.
