Well, Gauntlet III: The Final Quest, introduced a Lizardman, a Golem, an Ice Man (...no I don't know how that's different from a Golem other than being made of ice), and a Merman as the four new classes.
I know that Gauntlet: Third Encounter included some good additions (Samurai and Pirate) and some OUT there additions (Geek, Punkrocker - a girl btw, Gunslinger (cowboy woudl have been a better name) and Robot), but some of those would work well with the above.
Also, there was originally a male Elf in Gauntlets 1 - 3, and both games AFTER Dark Legacy, Seventh Sorrow and the 2012 reboot, also had him.
Seventh Sorrow was also planning on a Lancer (Presumably a Jouster or something) and "Tragedain", but they were removed when the two head programmers left (out of spite maybe?).
Other than that, I imagine you could use a lot of mythical stuff since Gauntlet is one of many games of the time that were inspired by D&D.
