No one. They are carved into the wall.

(Who wrote them? And how if they're presumably transforming?)

Well yeah, its a bit tongue and cheek as to how it was carved in, suffice to say that before Daisy came this has happened a lot. The transformation did not progress identically for everyone and those who had the use of their hands managed to gouge some words into the walls. Or in desperation, they carved it out with the edge of their hoof. The people who eventually enjoyed the experience and decided to come back may have also carved in the later snarky comments on the walls. The main point was to help provide backdrop with a little bit of bathroom graffiti humor to stand against the growing tension.
