Well there are two on my plate at this time. Which one I start first depends on whether or not my friend is able to purchase a monofin at this time or whether it's going to take her a while to get one.
If she is able to get one soon I'm going to be making her an emerald green tail. The details of it haven't been hammered out other than the color, but it's probably going to be fairly simple because it will be her first tail and I don't want it to have to many extra frills since she'll have to learn to swim in it. Might as well make things as easy as possible until she has experience.
If she doesn't think she's going to be able to get one soon I'll probably just go ahead and start on my new one, which I would like to make based on some kind of deep sea creature. I found this really interesting fabric with black scales and red iridescence.

The fabric is a 4 way stretch blend of 80% Nylon and 20% Spandex. Generally the more spandex in the fabric the better the tail is going to be for swimming.
As for the dorsal fin, there is a special insert I made that goes inside the tail. It is held inside the tail by a pocket sewn to the inside of the tail and is totally removable for drying and storage purposes.
