(this makes 3 plates)
what you need
-1 cucumber
-1 bag of microwave steam mixed veggies
-either canned, or steamed spinage
- salt/pepper
- 16 eggs (roughly 5 eggs per person)
- a slab of ham
- shredded cheese
- a small bundle of onion leeks
take a large bowl and crack all your eggs inside. mix about a cup of spinnage in with it. scramble them all in the bowl well. (you will want to use a soup Ladel for portioning.)
finely chop up your onions, and cube your ham. set the onion aside and fry your ham cubes till they are about your preffered way (either soft and hot or crispy)
using your ladel. scoop your egg mixture and dump in greased pan. salt and pepper to taste, rotate till its fully flatly rounded. this is your first layer. lay it on your plate and evenly portion out your ham and diced onion, and cheese. repeat with another egg layer, ham onion and cheese. and top with final layer of egg top.
decorate with cucumber, and side it up with your steamed veggies (typicaly i buy the steamer bags and just microwave em)
a healthy low Carb meal!
