second meal! for my fellow diet-bros
(this makes 3 plates)
what you need
-9 eggs
-2 bell peppers
-a can of strained and washed black beans
- salt/pepper
- 1.25 pounds of ground turkey (beef works too but turkey is prefferable)
- a half cup of shredded cheese
- maple syrup
- beets
optional
- celery n peanutbutter
take your 2 bell peppers and cut them into small diced squares. put them in a bowl and crack
your 9 eggs in with them. stir till well mixed, then add your washed black beans. stir gently.
set to the side.
your turkey needs to be tottaly thawed. put in a separate bowl, and pour 2 tbs of maple syrup
in the meat and by hand mash and fold and mix the syrup into the meat.
make them into small balls and cook in a greased skillet.
set aside your mayple balls, and now pour your eggy mix into a skillet. they can take a bit of time
but stir occasionaly like you would scrambled eggs. scraping the underside so it doesnt set
and burn underneath.
once it starts to look fluffy (not dry) pour in your cheese and continue stirring to distribute evenly.
heat up your beets with your prefered method
divy up and serve with a mayple drizzle on top of it all and set up your side
