Getting in some sushi practice tonight for a sushi night I'm doing next week.
Standard Maki style roll with seared tuna, asparagus, cream cheese and avocado. Tempura fried. Served with the standard pickled ginger and wasabi made into a rose and a leaf, with roasted edamame "berries"
On the side is cold soba salad, soy sauce, and chili oil.

Recipe:
One batch of sushi rice (however you like to make it)
tuna, cut into 3/8th inch strips
avocado, batonnet
Asparagus, blanched
nori
Tempura batter:
1 cup flour
1 cup ice water
1 egg
pinch salt
pinch sugar
Layer the sushi rice on the nori on a sushi mat. Place the components down the center and roll from bottom to top. Keep the roll tight while rolling. Once rolled, firmly press the sushi with the mat to compress it slightly.
Dip the roll in the batter and fry in 375 degree oil until lightly browned.
Soba salad:
1/2# soba noodles
2 parts rice vinegar
1 part sesame oil
1 part soy sauce
1 part sugar
Cook the soba noodles and chill.
Toss the noodles with the rest of the ingredients and serve cold.
