Don't knock the packet mix because there are amazing things you can do with them. I have a few cake mixes in my cupboard and thought that it was time to use them up rather than my usual make it from scratch. This is a great way to create wonderful things with a packet mix and can be created with heaps of variety. I've made similar cakes using chocolate cake mix, vanilla cake mix, butter cake mix and even a variety of muffin mixes.

Ingredients
Packet mix - 1 Madeira Cake uses 2 eggs and 3/4 (190ml) milk. Follow mixing directions.
1-2 Tbsp. Kahlua
dash of brandy or brandy essence
825 g tin of peaches or fruit of your choice
sugar to sprinkle
cinnamon to sprinkle
Optional: Jam and Cream to serve.
Directions
Prep cake mix according to directions
Grease and line a slice tray or cake tin
Pre-heat oven to 180°C
Drain peaches and arrange the fruit in the base of the tray or tin (reserve juice or any extra fruit to use in something else)
To your cake mix add brandy essence and Kahlua, beat well
Gently pour cake mix evenly over the fruit being careful not to disturb the fruit too much.
Bake as directed on the packet mix - in this case 40-45 minutes at 180°C.
Allow to cool in the tin for a while then flip it out carefully onto a cooling rack peach side up.
While it is still warm sprinkle with fine sugar and cinnamon
To serve
Very tasty hot or cold.
Cut into slices and serve with your choice of ice-cream, cream or custard.
