My first attempt at making one of my favourite treats.
My changes and notes are written in itallics.

Scotch Eggs (Simple)
Ingredients
4 Hard Boiled Eggs - Did these the night before and not totally hard boiled
1/2 cup flour - Didn't use
1 tube of Breakfast sausage (not in links) - also known as sausage mix used two tubes
1 egg beaten - Didn't use
1 to 1 1/2 cups Panko bread crumbs - massaged into the sausage mix
Added - sesame seeds, mixed herbs and spices, massaged into the sausage mix
Method
Preheat oven to 350 degrees.
Peel your hard boiled eggs and dry them.
{I didn't follow this step - Toss the hard boiled eggs in flour. This dries completely and coats the eggs which help the sausage to stick better.}
Divide the sausage into 4 portions. Flatten each portion into thin patties.
Place a flour coated egg in the center of each sausage patty and press around the egg until it's completely coated.
Give it a roll to tighten things up around the egg.
{I didn't follow this step - Then dip this into the beaten egg and roll in Panko bread crumbs. }
Set on a cookie sheet and bake for 40 minutes.
I shallow fried these rather than baked
Serve this rustic meal with vinegary flavours like gherkins or robust mustards.
Notes
I didn't boil the eggs rock hard so that they didn't overcook in the second cooking.
I added about a tbsp of sesame seed.
I added a mix of dry herbs and fresh parsley with a little bit of Moroccan spice mix.
