The last time I made this, it was really too soupy and the chunks of tomatoes really didn't sit well with me. I decided this time, since we have the technology, to make it better! OMG I'M A GENIUS IT WORKED!! Totally in love with this remake! My kitchen still smells good hours later. DON'T FORGET FRESH HOT CORN BREAD!! :D
Ingredients:
1 (16oz) can of kidney beans
1 (16oz) can pinto beans
1 (4oz) can green chilies
1 (11oz) can corn nibblets
1 (14oz) can Rotels tomatoes and chilies
1 (28oz) can of crushed tomates
1 (1.25oz) packet of ranch seasoning
2 (1oz) packets of taco seasoning
1lb meat of choice (ground beef was used this time)
1 med onion
1 - 1 1/2 cup water **
Optional ~ sliced jalapeno peppers
Directions:
Drain and rinse the beans (this is different from last time, I didn't like the stuff at the bottom of the bean cans getting into my food).
Brown the meat and drain excess grease.
Dice the onion.
Throw everything into the crock pot, don't drain anything from the other cans.
**I started out with only 1/2 cup water at first, but about the last hour it was still too thick for a soup so I added the other cup. You can adjust the water based on your preference.
Cook on high for 3 hours or on low for 6 hours.
Top with shredded cheese, sour cream, tortilla chips or anything your aching stomach desires!
