Mixing my two favorite foods together ... guacamole and deviled eggs ... best craving ever. I know from time to time I crave really weird combos (I SWEAR I AIN'T PREGNANT!), but this one just took the cake. However, I worked through my lack of sanity and made these. Devouring the unborn has never been sweeter. ^.^;
Ingredients:
6 large eggs, hard boiled
1 medium haas avocado
2-3 tsp fresh lime juice
1 tsp red onion, minced
1 tbsp minced jalapeno
1 tbsp fresh cilantro, chopped
kosher salt and fresh ground pepper, to taste
1 tbsp diced tomato
pinch chile powder (for garnish)
Directions:
Place eggs in a medium pan, and cover with about an inch of cold water. Turn heat on medium and bring the water to a boil. When the water boils, shut the flame off and cover for 20 minutes. Run under cold water to let the eggs cool.
Peel the cooled hard boiled eggs.
Cut the eggs in half horizontally, and set the yolks aside.
In a bowl, mash the avocado and 2 whole egg yolks; discard the rest. Mix in lime juice, red onion, jalapeño, cilantro, salt and pepper and adjust to taste. Gently fold in tomato.
Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Sprinkle with a little chile powder for color.
While I did the spoon thing this time, I don't really like the presentation of it. I'm thinking next time of using a pastry bag and pipping the mix into the egg to give it a more refined look. I used the left over egg yolks for an egg sandwich with a little mayo and salt.

I have had something very similar to these and they were wonderful biggest difference would be that the ones I had included a little honey. Don't ask me how that works but it was a wonderful note on top of all that guacamole goodness. Left overs of the filling made a great dip too. These look brilliant. *hugs*
I was just chatting for a bit with the friend who made the version I had. Apparently the sweet honey balances out the bite of the jalapeno and chile but if using curry it compliments the curry. I told her about your recipe and she said add a little honey to any existing recipe. About one or two teaspoons is enough. *hugs*
