So in the spirit of things I have made this colorful dish to pair with tortilla chips and other Mexican foods! Or you can just drink yourself stupid like the rest of the American world. This super tasty and super simple recipe is definitely something I suggest everyone trying at least once!

Ingredients:
8 ounces Monterey Jack cheese, shredded
3 cups frozen corn, defrosted (This time I only used yellow, may mix it next time)
2 cups mayonnaise
1/4 cup chopped green chiles (small 4 oz can), drained**
1/2 cup roasted red bell peppers, minced (for more color, I'm thinking half red and half green/yellow/orange)
1 cup grated Parmesan cheese
2 Tb Adobo Seasoning
**Substitute for jalapenos if you're daring enough ;)
Directions:
Preheat oven to 375º. Mix all ingredients together. Spread evenly in casserole dish and bake 45-60 minutes till top is golden. Serve warm!
