Lavish luscious lamb from the kitchens of
chrismukkah
Just in time for Easter folks :P
A very simple marinade of:
1/2 cup extra virgin olive oil
2-3 heaping tablespoons balsamic vinegar
3 cloves fresh chopped garlic
1 shallot, finely chopped
1/2 tsp dried rosemary
1/2 tsp dried oregano
1/2 teaspoon dried thyme
ground black pepper
dash of red chili pepper flakes
Method
And all you have to do is mix that up in a small bowl...have a large ziploc bag and put your lamb in it....pour in the marinade and zip UP the bag, shake it around a few times...
I wont deny that the flavors would be a bit more pronounced leaving it to marinade overnight, BUT, that lamb was calling my name and saying "eat me..." :P
Heat up the grill to about 300 / 350 - and this really does NOT take all that long to cook (about 15 to 20 minutes tops!)
If there is any leftover marinade, save it for the last five minutes of grilling but PLEASE use caution as the oil and vinegar will cause flare ups on the grill itself!
Once its all cooked though, just plate and let rest for about 5 minutes and serve with rice and snap peas (or whatever, I had leftover snaps and boxed rice so there :P)
