The white thing is yoghurt, that is why I named it turkish styled. My sauce is an ordinary meatsauce but i ve used a lot of paprika so that is very spicy. My dishes contain no meat or other animalproducts, so i ve used tofu and mushrooms. My yoghurt is soy yoghurt. But i think it would turn out delicious using meat and milk products aswell. Just be sure to make your sauce spicy :D
Okay, i give it a try to explain.
250 g durum wheat semolina pasta (I bought them in the store, cooked with salt and some cooking oil)
200 g Tofu (or groundmeat)
about 1 cup sieved tomatoes
1 teaspoon stock/boullion (not sure if it is the correct translation, this powdery soup stuff)
some mushrooms (I ve used 5 big champignons)
1 1/2 cup soy yoghurt/ normal yoghurt
2 garlic cloves
1 onion
Salt
a bit cayenne pepper
some oil
lots of paprika seasoning
Fry the onion, one garlic clove and the crumbled tofu using some oil in your pan till the mushrooms are getting soft and darker. Add the stock/boullion, cayenne pepper and the paprika (I ve used about 1 1/2 table spoon of paprika). Just be sure that it is realy spicy because the yoghurt weakens the seasonings. Mix it and add sieved tomatoes. Mix it again and remove the pan from the cooking plate. Now season the yoghurt using the second garlic clove and some salt.
Put your cooked pasta on a plate, about 2 tablespoons of your prepaed yoghurt on top and on top of that the tofu/meat/paprika stuff and it should look and taste like mine. :D
