The in-universe reason for this has yet to be explored; a lot of things about what's happening remain intentionally unexplained. The story was meant to be a take on zombie movies, which usually leave the reasons behind things unexplained, even at the end of the story. I have some reasoning behind it, but it hasn't come up yet.
From an author standpoint, there seems to be far less female to male transformation as opposed to male to female, so I wanted to add more to the pool, so to speak.
