Give this light simple succulent soup a go from the kitchens of
eratosthenes
Ingredients per serving:
1/2 medium onion, sliced into thin, noodly pieces
1 tbsp. butter or oil
1 or 2 cloves of garlic, chopped
1 to 2 tbsp. green onion, chopped
1 cup chicken stock
1 to 2 oz. dry rice noodles
salt to taste
fresh cilantro
Directions
Heat butter or oil in a pan over medium-low heat. Add the onions and garlic with a pinch of salt, then cook until the onions are translucent.
Add the stock and the rice noodles. Simmer until the noodles are soft, add salt to taste, then add green onions.
Serve garnished with fresh cilantro and enjoy!
