I made these for work and I had a blast doing so.
EVERYONE LOVED THESE
The following recipe is in metric
(sorry for those of you without a kitchen scale they are an indispensable tool. If you bake regularity you will not regret investing in one.)
This particular type of dough is called Kneteig (kneaded dough) that is specifically meant for rolling out. feel free to decorate these as you see fit this is a good all purpose rolling cookie dough
you will need:
500 grams flour
200 grams sugar
250 grams butter at room temperature
1 teaspoon baking powder
2 eggs
Method:
mix flour sugar and baking powder in a bowl pour onto a clean workspace
cut butter into small chunks and place on top of flour
make a well and crack eggs inside like this
knead by hand until smooth and glossy
you are in for one serious workout,
at first this recipe seems dry it does come together perfectly. it is a good 6-8 minutes of kneading
place in bowl cover and chill 30 minutes
roll out of flowered work surface cut out
(do not worry about re- rolling the scraps you can roll this dough to the cows come home and the cookies will not get any tougher it may get soft though chill for 10 minutes if this happens )
bake at 180 degrees C (350 degrees F) until slightly browned. 8-15 minutes
let cool and decorate as desired
I layered two unbaked cookies, one with a second cut out and added a dollop of raspberry jam before baking.
They took about 12 minutes
I also added a dusting of powdered sugar
