Here's a marvellous meatloaf with sides from the kitchens of
hashire
so I made this the other night, came out AMAZING, so I'm gonna share the recipe for anyone who wants to try it
WHAT YOU NEED:
3 lbs. lean ground beef (can be beef and pork as well, but I used straight beef for this recipe)
1 bag of frozen green beans (or any veggie of choice really)
3 large eggs
1 bag honey gold potatoes
2 cups plain bread crumbs
Bullseye brand Texas Style barbecue sauce
Garlic Powder
Olive Oil
Salt
Pepper
Gallon zip-loc bag (for potatoes)
Before you begin, Preheat oven to 450 degrees F
Meatloaf preparation:
In a really large bowl, combine the ground beef, eggs, bread crumbs, 2-3 tbsp. of Salt (depending on personal salt preference), 1-2 tbsp. of freshly ground pepper (depending on personal preference), 3 tbsp. of garlic powder and 1/2 cup of barbecue sauce.
fist vigorously. No seriously, use your hands and mix it up real good until no stray ingredient is left and its just one massive blob of delicious smelling meat.
Once its all mixed together, place the meat inside a 1.5L 5"x9" pan (or whichever you use for meatloaf. that's the size ours is XD) . Be sure to lightly spray the pan with cooking spray before you do so! Pour some more barbecue sauce along the length the meatloaf in a zigzag pattern, then (once the oven is preheated) place the pan inside the oven on the center rack and cook for approx. 1 hour 15 minutes (or until the internal temperature of the meatloaf reaches at leash 155 F)
You can add more barbecue sauce to your meatloaf afterward if that s your preference!
Potato Preparation:
Cut all the potatoes in halves, then rinse in a large bowl.
Put all of the potatoes in the large zip-loc bag I mentioned before, mix in 1/3 cup Olive oil, 2 tbsp. salt, 1 tbsp. ground pepper, and garlic powder to taste (I like to use a lot cuz yummy garlicky potatoes o3o. you can totally eyeball the garlic powder on the potatoes, it'll taste good no matter what). zip the bag shut and then proceed to shake and massage the bag until the oil and seasonings are evenly mixed. You CAN taste the oil in the bag to see if it needs more salt/pepper/garlic.
Once they're all mixed, empty the bag of potatoes into a glass or aluminium cake pan, cover with aluminium foil, and bake in the oven for 30-45 minutes or until the potatoes are soft and easy to pierce with a fork (or still crunchy, or both, your preference)
Green beans/veggies:
I normally buy the bags of frozen veggies that are like "steam in a bag" and all you gotta do is stick the bag in the microwave and be done with it.
You can use any veggie you want and season them however you wish, but for those of you who like green beans, here's how I seasoned mine:
Just a small teaspoon of olive oil, and a little salt and pepper :3 green beans are delicious as is so not a whole lot of seasoning is needed! I only put enough to give it a little bit of flavor.
Cook the veggies last since they're the ones that cook the fastest!
