Well I'm catching up to the faccc backlog and figure it was okay to do one of my own recipes. From the kitchens of
yelleena a multi purpose mix that's good for making meatloaf, meatballs and even burgers.

I needed to add oats into my diet on a more regular basis and to be honest I can't stand oats at the best of times. Arisuvixen's recipe was just what I needed and I added some things that I like. I'm very happy with the results and so are my mate and daughter.
Meatloaf
4ld of meat (pork, beef and turkey mince)
1 cup of frozen mixed veg (peas, carrot and corn)
1 tbsp. sweet chilli sauce
2 tbsp. lemon pepper seasoning
2 eggs
1 cup instant oats
Directions
1. Mix all together
2. spray your loaf pan or grease it (I have a ceramic heat proof pan)
3. preheat oven to 180 C - 200 C
4. Pack the mix firmly into greased loaf pan (about 1/2 of tis recipe)
5. Cover with aluminium foil
6. Bake for 45 minutes
7. Check and turn the meatloaf dish around
8. Bake for a further 30 -45 minutes
9. Meatloaf should have pulled away from the sides of the loaf pan, if not allow to cook a further 10 minutes
10. Remover cover
11. Carefully drain any excess fat (Extra care this is hot stuff)
12. Sprinkle grated mozzarella cheese over the top
13. Return to oven and cook for a further 20 - 30 minutes until the cheese is golden
Let cool in the pan and either slice in the pan of turn it out onto a plate, slice and serve. Great with mixed veg and or mashed potato
Note: same recipe turned into meatballs
Using the other 1/2 of the recipe I made 30 meatballs
form them into small meatballs
sit them in the fridge for at least 10 minutes to get them firm
place on alfoil lined tray with holes in it on top of a drip tray to let them drain as they cook. (I made a drip tray from alfoil put a metal cooling rack across the top, covered that in foil and poked holes in the foil, sprayed the foil with a little cooking spray and put the meat balls on top of the foil.)
Bake in the oven for about 30 minutes or until brown and cooked through.
Serve on their own, with sides of veg or pasta or incorporate them into a spaghetti and meatball dish with a tomato/basil sauce
Seasoning is a personal choice so put in what you like.

Additional Note: This costs approximately $1.80 - $2 per serve. We got three main meals for three out of the meatloaf plus several sandwiches and two meals from the meatballs, plus a small snack meal.

very yummy actually. It makes the recipe so versatile and you can change the spices to change the taste. So far I've meatballs and put them into a meatball and spaghetti dish, made a cabonara pasta with the meatballs added, burgers, a big meatloaf and several mini meatloaves. My fave is to cook a large meatloaf and slice it when its cold then take the sliced pieces and layer the meatloaf with cooked onions, cooked and mashed or sliced potatoes, cooked sweet potato then top with a cheese and bacon pieces. *hugs* from yelleena
