Made some new cookies this evening. Om nom. They came out very tasty--a nice, crispy edge and a soft center. Recipe time!
1 cup shortening
1 cup sugar
1 cup light brown sugar (packed)
3 eggs
1 tsp vanilla extract
2 1/2 cups all purpose flour
2 tsp baking soda
3/4 tsp salt
1 tsp ground cinnamon
2 cups old-fashioned oats
1 cup raisins
Cream shortening and sugars until fluffy. Beat in eggs one at a time, then beat in vanilla. In a separate bowl, combine the flour, baking soda, salt, and cinnamon, then beat into the creamed mixture, just until combined. Stir in the oats and raisins.
Shape into 1-inch balls, 2 inches apart on an ungreased baking sheet. Flatten the balls (hurrr). Bake at 350* for 10-11 minutes until just golden brown. Cool on wire racks.
Makes about 4 dozen cookies.
Alternatively, you can make these into ICED oatmeal raisin cookies. Just mix together some powdered sugar (about 1/2 cup) and water or milk(about 4 tbsp) and a bit of vanilla extract (1/2 tsp), mix it all together, and drizzle (or spread) it over the cookies. If it's too thick, add more water/milk, too thin, add more sugar.
