So this here is a soup I found in a slow-cooker recipe book I bought 3 years ago. I decided to try it because it was really simple and looked fairly tasty. Is it the healthiest recipe? Probably not, but it is made with minimal ingredients that most of us probably have sitting around, so it's good at a moment's notice!
Cheddar Cheese Chowder
Makes 4 servings
Ideal slow cooker: 3-4 qt.
Ingredients:
10oz package frozen mixed veggies*
10 3/4oz can cream of chicken soup
1 soup can milk
shredded cheddar cheese
*[I used a 12oz package of frozen broccoli because I love broccoli. Alternatively, I'm sure you could use fresh veggies instead!]
1. In a saucepan, cook and drain frozen veggies according to package directions. Combine veggies, soup and milk in slow cooker.
2. Cover and cook on low 3-4 hours or until veggies are done to your liking. Stir occasionally if you're nearby.
3. Sprinkle individual servings with cheese.
I also added a little salt and a little more pepper and as you can see, I served it with cheez-its rather than soup crackers. :) It tastes pretty awesome and it's very cheesy!
It's nothing gourmet, but I'm glad to have found a recipe that tastes this good without using Velveeta.
