That's a really good way to think about a chorale now that you mention it. I really should keep that more at the front of my mind when working on this sort of piece. Thanks for the feedback. <3
I agree with you on the incomplete part though. It starts in the key of C, but end in the key of G (not via half cadence, just as a consequence of the overall progression) which is why it doesn't sound quite right. I was leaving to go on a trip the day I posted this, so I decided to leave it there, but had I continued to work on this song for more than one day I would have attempted to bring it back around to the key of C in another half to make it feel more complete.

Well, that's terrific. You also might have been able to get away with ending in the key of E Major, since E is the Major 3rd in the key of C Major.
I'm assuming that ending in G Major doesn't work because G is the 5th in the key of C, and 5ths are hollow chords that can't be determined as major or minor.

You're thinking of an open fifth, which isn't the same as being in a relative dominant mode, but you have the right general idea.
In longer Chorals it's rather common to do something akin to an ABA pattern with B in the key a fifth away, usually preceded by a half cadence from the first A section. I got though the AB part, but then ran out of time/motivation and forced an ending more or less, which your ear recognizes in addition to the song ending on a different chord then it started. I may revise this piece at some point in the future so hopefully I'll come up with a better ending by then. :P
