another note on these stupid things
so Im making these as part of a thanksgiving pot luck I tried something different this time.
when i went to cute them I put more flour on top of them while they were rolled flat in a sheet. then I rolled them into a roll and sliced them thin into noodles. I didn't really care about letting them dry much. The flour kept them from sticking. As i cut them I tossed them between my fingers to loosen them and break them up. I put them on a perforated pizza pan and put them in the oven. I set it to preheat to 350. After it preheated to 350 i cut the oven off and let them sit in there for about 10 -15 then took them out. they were dry.
Recipe wise I used about 4 eggs this time sticking with my 3/4 -1 cup of flour per egg rule. But I only put about 3 and 1/4 cups of flour in with about 5 table spoons of olive oil. They cam out about right.
apologies. When i cook its rare i measure. often times i goo off what it should look and feel like.
