sibelius 7 first, I write in the music and the program can play the audio of it using real life sample sounds. Sometimes it sounds almost like people are playing it, but sometimes it really doesn't. Lutes seem to come out well on it however. Was it you who left the deleted comment?
Garage band is ok, but is samples only so very difficult to make good original music. Even my electronic stuff I do from scratch, each note and sound I manually create and put in. With the classical music it is even more complex, I have my keyboard so try tunes and if I like them i write them down note by note until I have a full piece of music.
