Either luck, or using the pokedar system. If you use the pokedar, every time you encounter the same pokemon as you did in the last patch of shaking grass, its called a stack. Every stack raises your percent chance of finding a shiny. And if you set off the pokedar and the grass sparkles, there's sure to be a shiny in that patch of grass. Look it up. Its a bit complicated, but apparently it works. If you can avoid accidentally breaking your chain of encounters and resetting the stacks.
