I have a failed attempt at apple cinnamon (i know where I went wrong though) What was supposed to be apple with a hint of cinnamon became cinnamon with a hint of apple because cinnamon oil is so damned potent. Thankfully who i was making it for loves cinnamon so it didn't matter much.
I worked for a month in Hunt Valley Maryland once. That's where the McCormick spice factory is. On the days that they ran cinnamon, the whole valley smelled of cinnamon. I'd be driving on the highway, and coming over the ridgeline and descend into the valley, and WHAM! CINNAMON!!!!

You can try pine flavour. Not pineapple or similar: I mean pine! That wonderful hint of resin, a bit spicy and refreshing, like that you smell near freshly cut wood when resin pour off. I have tasted them sometimes, and trust me they are wonderful (especially gummy ones).
Or maybe it's just me (the day they will make a pepper essence or a paper one I'm gonna bath in it)
