Well, breeding was introduced in generation 2, so within the limitations of the Gameboy Color. Maybe having different types of "birth" wasn't possible back then and wound't have affected the gameplay in any meaningful way. So they just said... "Eggs! ... Let there be eggs".

Oddly enough in the anime, there were certain pokemon that happened to get a special egg design. This was the case with Misty's Togepi, May's Eevee, and Brocks Happiny.
