You might want to move that water in the bow and aft deeper in the ship placing waste water in those ares as radiation protection. Putting the potable water in better shielded spots

It's not nuclear. I'm trying to use a power source that requires minimal fuel for a long voyage. I was thinking solar, since it can easily be replenished. Any ideas?

The ship may not be nuclear but space is full of rad sources called stars. Here on earth we're protected by our planets magnetic field and atmosphere and since this ship isn't atomicly powered it'd lack the power to create a wide spread shield although you could possibly also protect the occupants with a plasma field which is based in real science believe it or not (look up a device called a plasma window) but the trick would be layering the plasma fields hot plasma and cold plasma so those inside the ship aren't cooked

Actually this is a real technology which is in its infancy but the potential applications of cold plasma technology are wide open everything from windows to surgery to stealth applications. Imagine a plane outfitted with plasma pencils. Plasma being magnetic would stick with the aircraft and radar waves wouldn't even see it. Now figure a ways to layer plasmas cold/hot/cold and you've got something that would stop many munitions
