A delightful dinner from the kitchens of
chakatpachinko
I haven't improvised a dish in ages, it seems, and the other day I just couldn't resist. It was one of those 'what if I threw this, this, and this together...oooh and with THAT as a side dish? Ooooh this is gonna be great!' moments that panned out really well!
Super simple list of ingredients, and an even simpler recipe! Why, I even think my dear Palewind could make this in hir sleep...and shi's normally much better at burning water. *giggles*
INGREDIENTS
--main dish--
6-8 chicken tenders OR 2-4 chicken breasts (depending on size, really)
1-1.5 cups Panko breadcrumbs
3/4-1 cup grated parmesan cheese
1 packet of powdered ranch dip mix (Hidden Valley & some other brands are available)
2-3 eggs (depending on how much chicken you're making, this could increase/decrease)
--sides--
mac and cheese:
1 jar of Ragu cheese sauce (size can vary depending on the amount you're making)
shell pasta (again, the amount will vary depending on the quantity you need)
1 can of green beans (I prefer fresh but was on a time crunch XD)
**I just cook the pasta according to box directions, nothing fancy to type here ROFL**
DIRECTIONS
-preheat oven to 325
-crack and stir up the eggs in a bowl
-in another bowl, combine the parmesan, panko, and ranch powder; stir well to combine
-take the chicken and dip it into the egg mixture, coating all sides. when done, bread it using the ranch/panko/parmesan mixture in the second bowl. Make sure it's well covered--and sprinkling a little more over the tops later on is good too! ;)
-place the chicken on a cookie sheet (I HIGHLY recommend lining it with parchment paper--makes clean-up MUCH faster) and bake for 24-26 minutes or until the juices run clear when you cut into the chicken. Oven times will vary of course, and if your chicken pieces are thicker, make sure to cut into them to make sure they're cooked through.
Serve and enjoy! This particular meal I made fed 3 with leftovers, but you could easily make more or less to suit your hungry family needs. ;)

Wondering where to find some of the ingredients, or wondering what exact ones I used? Here ya go:
For the chicken, I MAJORLY prefer the fresh, 'Smart Chicken' brand. It's air cooled, always cooks/bakes VERY well, and comes in an organic variety as well if you prefer.
Ranch dip packets are offered by Hidden Valley and other brands, and most stores have their own store brand product as well that I'm sure is just as good as the pricier ones. I found them not only with the salad dressings/condiments at the store, but some places also have them in the produce department since they offer other types of veggie dips there too.
*ALLERGY ALERT: Contains dairy, wheat, and gluten ingredients.
