Hmm...actually, I played a prestige class in D&D before that actually did basically do this. You got to pick a dragon type and your character gradually gains attributes of the species, to the point of having a breath weapon, that dragon type's immunities, beefed up stats, ability to fly, and the option to use clawing or biting attacks. Was pretty neat!
