I can only assume Mom was either a very tough gnoll or a very open-minded and possibly fairly bored giant.
And they either met up while 1) the giant was serving as a mercenary for a gnoll band, thereby increasing their ECL or 2) during a bar-room brawl, possibly in Spinecastle if you've got that issue of Dungeon.

If D&D gnolls really are based on hyenas, then the mother being the gnoll works. Female hyenas have higher testosterone than the males, making them physically more "masculine" in size and shape; therefore, female gnolls would be Amazonian compared to male gnolls, and almost exclusively Barbarian in class.
The circumstances of the conception could be that female gnolls have a "Red Sonja" contract with non-gnoll males: only by defeating one in combat does he gain the privilege of mating with her. Male gnolls are more or less exempt from this contract as the majority of them would never hope to defeat a female gnoll, so they would have to use their wiles to become the male-wife of their to-be female-husband.
As for the giant paternity: maybe a verbeeg (Neutral-Evil Giant-kin, 9'1"-9'8") who became a werehyena during a misadventure and fled his imminent execution.
