Tasty taco's with tantalising turkey filling from the kitchens of
chakatpachinko
Been wanting to make some Mexican food for quite some time and thanks to the slew of folks apparently having the same idea and thus purchasing ingredients for it, I figured I'd follow suit. XD But opting for a little lighter fare--minus the gobs of sour cream 'cos I simply love that stuff--I chose ground turkey instead of ground beef for the filling. Anyhoo--SUPER simple and FAST recipe below:
What you'll need:
6-8 taco shells (crunchy or soft to your preference)
1lb ground turkey (any brand will work, though I actually prefer the store brand to Honeysuckle as it has a few less preservatives and comes in an organic variety)
1 packet of taco seasoning
3/4 cup of water
**OPTIONAL: salsa (to taste, so the amount here will vary if you choose to use it)
toppings:
shredded lettuce
sour cream
shredded cheese
diced tomatoes (i forgot to buy some little roma tomatoes before makin' these. *facepalm*)
salsa!! (the Herdez brand is love. a little more expensive, but SO YUMMY)
optional sides:
refried beans--easy to make by cooking and mashing some plain pinto beans then seasoning to taste, or you can buy the canned version (I recommend finding the vegetarian ones. way less preservatives and no lard in them. eww. XD)
Directions:
1. Place a large skillet on the stove and turn it up to just past medium heat (depending on how well your stove works, of course) and brown the meat--it won't take long! I like to use a little extra virgin olive oil in the skillet to keep the meat from sticking to it and thus browning too fast/burning.
2. once the meat is done, drain off the fat liquid if there is any and add in the packet of seasoning as well as the water. Stir to combine and then let it come to a boil, at which point you will want to reduce the heat and let it simmer for a few minutes--3-5 should do it. ***At this point I added in roughly a quarter cup of salsa (Herdez brand green chili) to help everything stick and to give it a lil' extra kick. ;)
3. All done cooking the meat? Well then it's time to bring out the taco shells! Start with the turkey on the bottom, followed in whatever order with the toppings--I recommend turkey/sour cream/cheese/lettuce--that way you get a ton of sour cream ;) But as for the ones in the photo, I stuck the sour cream on top.
The side next to the tacos in the pic is just the refried beans with a little of the shredded cheese on top.
Another fun thing to do is make double decker tacos--and boy are they FILLING! Basically the only extra step you'll have is taking a soft taco tortilla, spreading some of the refried beans on it in a thin layer, and wrapping it around the corn tortilla and pressing them together. Voila--Beat that, taco bell! ;)
