Sweet pleasing peaches from the kitchens of
faydyn
ridiculously easy and perfect for this time of year
you will need
1 cup of flour
1tsp baking powder
1/8 tsp. salt
1/2 cup (1 stick of butter at room temp)
3/4 cup sugar
2 eggs(at room temp)
5-6 peaches depending upon the size and variety
(I used white peaches and they were humungous)
preheat oven to 350
grease a 10 inch spring-form
(unfortunately I was out of shorting and i had to use my glazed no stick ceramic bake-ware disregard the fact that I didn't use one)
to skin the peaches drop several at a time in a pan of boiling water for ten seconds remove with a slotted spoon, the skin should peel off really easily
cut in half and remove stones
set aside
with an electric mixer cream the butter and sugar until light and fluffy add the eggs and mix until combined stir the dry ingredients in until you have a very thick batter (it is almost as thick as cookie dough) spread evenly in the bottom of your pan (it doesn't look like a lot of batter but the mixture expands a LOT because of the peaches acidity)
press peaches into pan on top of batter
bake until golden brown and set somewhere between 50-65 minutes
good with a cup of coffee and whip cream or vanilla ice cream good warm or cold
enjoy guys and galls
