Probably because it's easier, safer and cheaper to modify T-6 Texans. If it's a static museum piece that will never fly, a scratch-built, historically-accurate reproduction makes the most sense, but once you put someone in the cockpit, the rules change. The Me 262 Project (which I hadn't heard about until you mentioned it :) had the benefit of private funding and over a decade of research. I'm sure that, with the right resources, the same could be done for the Zero. For all we know, someone may already be working on it.
