Drunken Octopus and Snow Peas
(Crisp, yummy, Snow Peas and tender, succulent Octopus go out on a date, and get drunk. They wake up the next morning covered in Sesame Seeds. What a Wild Night!)
**Easy Difficulty**
Serves 2 to 3
½ lbs / 225 g Snow Peas, stems removed
½ lbs / 225 g raw Octopus Tentacles, thin sliced
4 Tbsp / 60 ml Shaoxing Rice Wine
2 Tbsp / 30 ml Light Soy Sauce
1 Tbsp / 15 ml Dark Soy Sauce
1 Tbsp / 15 ml Honey
2 Tbsp / 30 ml Toasted Sesame Oil
1 tsp / 5 g Chinese Five Spice Powder
Pinch of Toasted White Sesame Seeds
Pinch of Black Sesame Seeds
Salt to taste
1.) This Recipe will cook fast, so have everything ready before you start. In a Wok, or a large pan, set on High Heat, pour in Sesame Oil, and then add in Snow Peas and Octopus. Stir Fry for 30 sec and then add in Shaoxing Rice Wine. Mix quickly to cook off some of the liquid. Cook until Octopus is no longer translucent. Approx 1 to 2 min.
2.) Add in Honey, Light and Dark Soy Sauce, and Chinese Five Spice Powder, and continue to stir until the liquid cooks into a shiny glaze. Add White and Black Sesame seeds, and salt to taste, then remove from heat and serve with Rice and a cold Chinese Beer like Tsingtao or Yanjing. Enjoy an easy, drunken meal!
Extra Info: I use Shaoxing Rice wine a lot. A big reason is because on my birthday I got a giant 1 Gallon / 3.8 Liter jar of high end quality Shaoxing Rice wine from a good friend of mine, Chef Kelly. Chef Kelly knew I loved Asian cuisine and went out of her way to get it for me in Chinatown in California. Now, some people might think that it’s not really that big of a deal, but my friend is Australian. Caucasian, Blonde hair, and Blue eyes. This is not usually someone you think of when you think Authentic Chinese Cuisine. However! She studied Chinese Cuisine in Chongqing, China, for two years and then Indian Cuisine in Jaipur, India for another two years. She’s an Extraordinary woman. She’s definitely what you’d call an Ecoist. Admittedly, she said her Mandarin Chinese was rusty, so it took some time to track down exactly what she wanted to buy for my birthday.
Anyways, she bought me this giant jar of Shaoxing Rice Wine. Well, it's more like a giant ceramic jug with a cork than a jar. I don’t even know what the brand is because all the labels are in Chinese, but it’s very tasty! I’ll have a glass straight up every once in a while, but I would feel like it had gone to waste if I didn’t use it primarily for cooking. It brings such unique, bold flavor to the dishes it’s in. Just an ounce and it transforms the meal. Sweet, earthy, crisp, and oaky. And, it’s sooooo aromatic that when you cook with it, you’ll think you were getting soothing aromatherapy when you cook with it. Now, if you don’t have Shaoxing Rice Wine, and are unable to find it at your local Asian grocery store, you can substitute a nice dry sherry, but honestly, I would say you are missing out on some really unique flavoring for your dishes.
Back to the dish. XD. Snow Peas have such a fun snap to them. Crispy, and refreshing. It goes great with Octopus since Octopus has a chewy texture. The Sesame Oil, and white and black sesame seeds gives this light and refreshing dish a nice nuttiness. So octopus paired with the sweet, and savory, and nutty, earthy, oaky, ingredients with subtle hints from the Wine, it is a great way to enjoy Chinese Cuisine. :3 Happy Eating!
