Brilliant blueberries blend beautifully with this lovely cake mix from the kitchens of
Forest of torment
makes one 8x8 or 9x9 pan
you will need
4 tbsps. butter at room temperature
3/4 cup sugar
1 egg at room temp
1/2 cup milk
2 cups flour
2 tsps. baking powder
1/2 tsps. salt
2 cups (one dry pint) of blueberries
for the crumb topping
1/2 cup sugar
1/3 cup flour
1/2 tsp. cinnamon
1 dash of nutmeg(optional)
1 dash of allspice(also optional)
4 tbsp. butter at room temp
Set oven to 375 and grease an 8x8 or 9x9 baking dish/pan
With an electric mixer cream butter and sugar until light and fluffy add egg beat to combine add milk alternating with dry ingredients add blueberries and stir at slow speed or stir in by hand
Transfer batter to baking pan
For the topping combine all ingredients in a mixing bowl and cut in butter with a pastry cutter (make sure your cutter isn't a piece of crap like mine was http://www.furaffinity.net/journal/5005257/) or mix by hand if you do not own one until the mixture resembles really coarse crumbs
(I will be honest it is really hard to over-mix the topping because of the flour content) sprinkle topping over the batter bake until a toothpick or cake skewer comes out clean 45-50 min. depending upon pan size
