A slightly unorthodox filling but succulently sensational from the work kitchens of
Forest of torment
ok so I got creative with dinner one night at work
very simple
serves one (easy to double)
you will need
1 very large outer leaf from a cabbage
(make sure it is clean and free of holes)
mine had a diameter of 9 inches
1 salmon filet portioned mine was about 5 oz.
3 strips of cooked bacon
2 (button) mushrooms chopped
1 tsp. horseradish
1 tbsp. of mustard
salt and pepper to taste
start by trimming any ragged parts from your cabbage leaf and blanching in in boiling water for about 5-10 minutes or until slightly pliable place in ice-water to cool
coat your salmon in the mustard and horseradish place bacon and chopped mushrooms on top place salmon on cabbage leaf and roll up burrito style (make sure it is rolled tightly and the ends are folded over or it will come undone
place in a shallow baking dish seam side down and add about an inch of water to the bottom of the pan
cover and bake10-15 minutes at 375
carefully remove cabbage roll and reserve 2 tablespoons of the liquid at the bottom of the pan bring to a boil with
1/4 cup of cream
a splash of white wine
salt & pepper to taste
and a dash of nutmeg
cook until slightly thickened and poor over roll
serve with rice
very good
the filling can also be altered
I have done this with oriental veggies and soy sauce
I have also used basa monkish and sea-bass
cooking times WILL vary depending upon the thickness of your filet
it is better to err on the side of caution
the cabbage makes a perfect insulator
serve with rice
