Four flavourful meats blended with sensational seasoning from the kitchens of
Sharknado Served and steaming as an entrée.
This recipe will one of many entrees served as the upcoming Draft, at Dinner Service.
The accompanying salad is not pictured here. Any basic salad will do.
Suggested wine pairing is a Merlot.
Suggested beer pairing is a Hefeweizen.
This meal was inspired by T. Matt Latrans, the commentator for the FBA, the voice of the game. His love of Doritos made me want to re-purpose it as an ingredient, as such I ground them into powder and used it as the breading in the meatloaf. The addition of the raisins and apples comes from my love of stuffing at Thanksgiving, knowing how well those ingredients work with meat, even if unconventional. The mint is from its natural flavor profile with chicken and lamb, it also works as a nice palette cleanser, keeping the heavy flavors from overpowering the tongue. It may be a meatloaf, but like the FBA, the layers and depth to it are astounding.
THE SEMI FINALS - 4 meat meatloaf
(( When we tested this recipe, we used panko and date molasses; these have been substituted for more Doritos and regular molasses, respectively. But feel free to alter to your tastes))
Semi-finals Meat Loaf
1/2 lb. ground beef
1/2 lb. ground lamb
1/2 lb. ground pork
1/2 lb. ground chicken
1 medium red onion, diced
2 Granny Smith apples, peeled, cored and diced
3 cloves garlic, crushed
1 1/2 11-oz bags nacho cheese Doritos, ground (should resemble breadcrumbs, makes about 3 cups)
3 eggs
1-1 1/2 cups raisins, processed (should resemble tamarind paste)
4 green onions, chopped
1 cup milk
8 slices prosciutto
3 mint leaves, chiffonaded
1/2 cup ketchup
1/4 cup molasses
1/4 cup Worcestershire sauce
1 tsp. mustard
1 tbsp. smoked paprika
A simple note, please prepare the entire mise en place (the final preparations of your ingredients and
setup of them at your cooking station) before starting these cooking directions.
1. Preheat oven to 375F.
2. Sweat the garlic and onions.
3. Mix together 1 cup Doritos and milk in a large bowl. Add garlic and onions.
4. Place apples in pan that held aromatics and cook them until they've softened.
5. Add apples, raisins, and 1 cup Doritos to mixture in bowl.
6. Mix in eggs.
7. Mix in meat, mint, and the bulbs of the green onions.
8. Turn out into a 9" x 13" baking pan
9. Combine ketchup, molasses, Worcestershire sauce, mustard and paprika in a bowl; spread half of it evenly over meat loaf's surface.
10. Layer prosciutto over surface.
11. Sprinkle with remaining Doritos and green onion stalks.
12. Cook for 30 minutes, then glaze top with remainder of sauce.
13. Cook for another 30 minutes or until center reaches 165F.

Chiffonnade means to slice leafy green vegetables or herbs like spinach or basil etc. into long, thin strips. This is accomplished by stacking leaves, rolling them tightly, then slicing the leaves perpendicular to the roll. This method can also be applied to crepes or thin omelettes.
