Homemade Bannoffee Pie
Ingredients;
For the base:
100g butter, melted
250g digestive biscuits, crushed
For the caramel:
100g butter
100g dark brown soft sugar
397g Condensed Milk
For the top:
4 small bananas
300ml carton whipping cream, lightly whipped
grated chocolate
Method:
1. Tip the biscuit crumbs into a bowl & add the butter, mix it in well.
2. Spoon the crumbs into the base & about halfway up the sides of the tin to make a pie shell. (mine didn't lift out)
3. Chill for 10 minutes in the fridge.
4. Melt the butter & sugar into a non-stick saucepan over a low heat, stirring all the time until the sugar has dissolved.
5. Add the condensed milk & bring to a rapid boil for about a minute, stirring all the time for a thick golden caramel. (start with a wooden spoon then use a whisk once the condensed milk is added)
6. Spread the caramel over the base, cool & then chill for about 1 hour, until firm or until ready to serve.
7. Carefully lift the pie from the tin & place on a serving plate.
8. Slice the bananas & place on top of the caramel layer
9. Whip the cream & spread over the layer of bananas, sprinkle cocoa or grated chocolate & serve
If desired you can add some of the bananas to the top of the whipped cream too.
