Cheerfully cheery cherry cheese cake with a beautiful brownie base... who could resist? This colourful cake from the kitchens of
ArtemisZiebenwolf
This is the cake that I made my mom for her birthday. It is absolutely DELICIOUS. I had to share this!!!
These brownies and the cheesecake are made from scratch.
You can use a brownie box mix to save time. Just follow the instructions on the box.
Brownie bottom:
3/4 cup cocoa powder.
1/2 teaspoon of baking soda
1/3 cup vegetable oil (you'll need 2 separate 1/3 cup portions)
1/2 cup of boiling water
2 eggs
1 1/3 cups flour
1 teaspoon vanilla extract
1/4 teaspoon of salt
1 cup white sugar
1) Preheat the oven to 350 degrees Fahrenheit
2) Grease a 9x13 inch pan.
3) In a large bowl, stir together the coacoa powder and baking soda.
Then add the boiling water, the first 1/3 of a cup of vegetable oil. mix well until thickened.
4) Stir in eggs, sugar, and the second 1/3 of a cup of vegetable oil. Mix again until well combined.
5) Add flour, vanilla extract, and salt. Mix until the flour is well absorbed and there are no white chunky parts left.
6) spread evenly into the greased pan.
Set aside and make cheesecake batter.
Cheesecake batter:
2 eggs
1/4 cup of water
1 8 oz block of cream cheese. Room temperature and soft.
5 tablespoons of butter (Roughly half a stick)
2 tablespoons of flour
3/4 teaspoon of vanilla
1/3 cup sugar
1 can of cherry pie filling.
1) In another bowl, beat the cream cheese and butter until it is fluffy.
2) Add sugar and beat in the eggs, flour, and vanilla extract.
3) Beat together until smooth.
4) pour in cheesecake batter over the uncooked brownie batter, smooth it carefully and gently with a knife or spatula.
5) Open the can of cherry pie filling and drop cherries in random spots with a spoon.
6) after all cherries from the filling are dropped, drop in some of the goopy stuff with the spoon, use a knife or spatula to spread the pie filling around.
7) use the knife or spatula to marble the cheese cake and pie filling together by cutting in MOST of the way (not all of the way down) and moving the spatula or knife along in a swirly motion. Even it out once more with the knife.
8) Bake for 50 minutes to an hour in the 350 degree Fahrenheit oven, or until the "toothpick test" is clean.
Prep time: 15 minutes brownie bottom, 15 minutes cheesecake.
Cook time: Approx 50 minutes.
Total time: approx 1 hour 20 minutes.
