my process is a mess, haha. but yeah. in situations where there is a background, I usually do a few thumbnail poses of the character and then blob around with the background colors a bit until I figure out a background/pose combo I like (scenery is easier for me to work out with colors, figures are easier with lines). Next I'll be refining the background more details more until it reaches the same level of the character and then refining the character more and thennn fiddling/adding details and lighting and yadda yadda until it looks good
Sometimes I work tighter and actually produce a finished inked stage, then I lay down flat colors under it, a multiply layer over everything (colors and lines) and a screen layer over everythingeverything (colors and lines and multiply) and THEN add details on a flat layer on top of all of that.
Butt yeah. I don't really have a set process, I just sort of mess about until I get the desired affect.

I agree, smaller nose. More flora/colors to be involved. That could also be birds. ;D Perhaps a less saturated green for the tree's in the background as well as some more shadows in the rocks immediately behind her. As you mentioned though, this is in the wee baby stages of being done, so I am sure the next view we all get will have that much more definition to it. <3
The size of the muzzle is actually good, but the nose itself needs to be smaller. Cow lips sort of make fat flaps that are pretty well illustrated here: http://cdn.rekkerd.org/img/random/c.....ose_by_eti.jpg
If you can curve the end of the horn back a little more, I'm golden for the rest. I am excite!
