Kumamoto... I have such nostalgic memories of that city. One of them being the mom & pop ramen restaurant just a block away from my dorm. While each city has its own specific take on ramen, each local shop makes their own twist on that local specialty. Like all Kumamoto ramen, the tonkotsu soup was thin and mild. But it was still packed with flavor. The chashu was smoked, leaving a very distinct dark and flavorful outside with a juicy center. It may be a year before I ever have a chance to return to Kumamoto, but when I do, I will come back to that little ramen shop.
